Featured Recipe - Easy Peasy Quesadilla
Ingredients
Red Onion (finely chopped)
Bell Pepper (Capsicum)
Spinach (finely Chopped)

Method
1. Heat oil, in a frying pan, over medium heat. Reduce to low, add the veggies and saute for about 1 minute.
2. Grab a tortilla and evenly sprinkle the cheese onto half of the tortilla, top with veggie mixture, and a bit more cheese. Fold over the other side to close and make a half moon.
3. Empty and clean the pan. Dry fry the quesadilla for 2-3 mins until the bottom side of the quesadilla is lightly golden and toasted, then flip and cook on the other side.
4. Transfer to a chopping board and slice into triangles, plate them up in a Xay + Mama plate and don’t forget the bib to catch the bits that miss your lil one’s mouth.
